Recipe 33/50 : South Africa : Carrot Bredie

Today's recipe is from South Africa. This is not the staple or traditional food here but is served in many restaurants and famous. This is very healthy food, and is served as main dish in this place. I'm on a vacation @ Smoky Mountains and hence lacking words to write in here. Please enjoy reading the recipe and post your comments.

Ingredients
1 onion, chopped
1 Tablespoon oil
8 carrots peeled and chopped
2 potatoes, washed, scraped, and chopped
Salt to taste
Black pepper to taste
1 cup water
Method
1.In a skillet heat oil over medium heat.
2.Add the chopped onion, and cook until the onion is golden brown.
3.Add the carrots and potatoes with the seasoning.
4.Add the water and stir. Bring the mixture to a boil.
5.Reduce the heat and place a cover on the pot. Allow steam to escape.
6.Let the bredie simmer until the water has evaporated and the vegetables are soft. Remove from heat and mash.
7.Serve immediately with a little butter stirred in.
