Recipe 24/50 : Costa Rica : Gallo Pinto

If there is one meal that everyone in Costa Rica eats, it's gallo pinto. This hearty, healthy and filling dish is their basic rice and beans and is served 3 meals a day.

Ingredients
2 tablespoons canola oil
1 medium onion, finely chopped
1 medium Bell pepper, finely chopped
2 garlic cloves, minced
3 cups cooked white rice
1 can black beans, drained
1 teaspoon ground cumin
1 teaspoon ground coriander
Salt to taste
Black pepper to taste
Cilantro for garnish
Method
1. Heat oil in a large skillet over medium heat, add onion and garlic and sauté until it just begins to soften and turns color.
2. Stir in spices into onion and garlic.
3. Add in the beans and then the rice.
4. Combine the rice and beans evenly and cook until mixture is heated through.
5. Add salt and pepper to taste and serve hot.
6. Garnish with some chopped cilantro and serve!
